Mixed Vegetables and Meat Soup

INGREDIENTS

5 cups bouillon
2 cups mixed vegetables and sliced mushroom similar to those in Mixed Vegetables Soup
1/2 cup chicken or tender pork, cut into 2 x 1/2-inch pieces
2 teaspoons salt
Pepper, to taste
1/4 tablespoon chopped green onion
6 fresh coriander leaves, optional

Cook the meat for 15 minutes in the hot bouillon. Add vegetables and sliced mushrooms. Cook for 15 minutes more. Skim while cooking.

Season the soup with salt and chopped green onion, pepper, and coriander on top.

NOTE - You can use chicken and pork meat together. You can also use cooked shrimp and crab meat instead of the chicken and pork. A combination of chicken, pork, cooked shrimp, and crab meat can also be mixed.
