Beef Salad

INGREDIENTS

Prepare 1 cup Sweet and Sour Salad using finely chopped onions, radishes, and celery.

2 cups tender beef, thinly sliced against the grain

Sauté the meat for a few seconds in the following marinade:

1/2 cup beef stock
1/2 cup water
1 chopped garlic clove
1 bouquet garni made with 3 sprigs each of parsley, thyme, and 1 bay leaf

Pour 2 tablespoons mashed, roasted peanuts and 2 tablespoons seasoned fish sauce over the combined cooked meat and Sweet and Sour Salad.

Makes 4 to 6 servings
