Baked Ground Pork Casserole

INGREDIENTS

1 (3-1/2-ounce) package cellophane noodles, soaked in warm water for 5 minutes
   drained, cut into 2-inch lengths
1/4 cup dried black fungus strips, soaked in warm water for 3 minutes, drained, chopped
2 green onions, chopped
1 small yellow onion, finely chopped
2 pounds lean ground pork
3 tablespoons fish sauce
1/2 teaspoon white ground white pepper
1 teaspoon sugar
3 large eggs, beaten

In a large bowl, thoroughly mix the cellophane noodles, black fungus strips, green onions, onion, pork, fish sauce, pepper, sugar, and eggs.

Pour into an oiled 9 x 13-inch baking pan and press the mixture flat. Bake at 350 degrees for 40 minutes, or until done. Let cool before cutting into small squares. Serve with Savory Fish Sauce.
