Lemon-Herb Grilled Veal Chops

INGREDIENTS

4 veal rib or loin chops, cut 1-inch thick
4 slices firm, ripe tomato, about 1-inch thick
Salt, optional

MARINADE

3 tablespoons fresh lemon juice
3 tablespoons olive oil
3 cloves garlic, quartered
2 teaspoons dried oregano leaves, crushed
1 teaspoon freshly ground black pepper

In bowl of food processor, place marinade ingredients and process to blend. Reserve 1 tablespoon. Place veal chops in shallow dish and spread remaining marinade on both sides of chops. Cover; marinate in refrigerator up to 2 hours. Spread reserved marinade on one side of each tomato slice.

Place veal on grill over medium coals. Grill to desired doneness, turning once. (12 to 14 minutes uncovered or 10 to 12 minutes covered for medium.) Place tomato slices on grill during last 6 minutes of grilling time. Grill until heated through turning once. Season veal and tomatoes with salt after grilling, if desired.

Serves 4

NOTES - Marinating time can range anywhere from 20 minutes to 2 hours. Because veal contains only a small amount of fat, it's best cooked to medium rather than well done. Bottled lemon juice may be substituted in marinade.
