Roast Veal with Apple-Ginger Sauce

INGREDIENTS
1-1/2 to 2 pounds boneless veal roast
2 teaspoons olive oil
1 cup orange juice
1/4 cup apple, grated
1/4 cup raisins
1 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmegPreheat oven to 325 degrees. Heat oil in saute pan and brown all sides of roast. Place roast in roasting pan (fat side up) and pour orange juice over top. Make a paste of the rest of the ingredients and press on top of the roast.
Bake uncovered for 1 hour or until 155 degrees internal temperature. Let stand for 15 minutes and slice thin.
Serves 4
NOTES - A veal loin roast would be an excellent choice. Serve with rice. Garnish with slices of orange, apple or other seasonal fruit.
