Elk or Moose Liver

INGREDIENTS 1 whole liver, sliced
1/2 cup flour
1/4 cup bacon grease
1 can beef broth
2 tablespoons tomato paste
1/2 onion, cubed
3 cloves garlic, minced
1 bell pepper, sliced
1/4 teaspoon chili powder
Pinch of oregano
Pinch of black pepper
Salt to tasteHeat bacon grease in frying pan. Coat liver with flour, brown on both sides.
Sprinkle some more flour on the liver and then add enough water to cover the liver 3/4. Cook until the water is almost cooked away, turn the liver and repeat.
Move the liver and remaining broth to a casserole dish.
Preheat the oven to 325 degrees.
Add beef broth, tomato paste, onion, garlic, chili powder, oregano, black pepper, bell pepper and salt to taste. Stir, cover, and bake at 325 degrees for about 1 hour.
Make good use of the gravy, it is delicious as well.
