Grilled Pork

Moo Ping (Grilled Pork) is eaten as a snack in Thailand with Sticky Rice. But it can be eaten with regular rice as a meal, also.
INGREDIENTS
2 tablespoons sugar
1 teaspoon salt
1 pound pork, sliced into thin long strips, 1/4-inch thick
3 cloves garlic, minced or pressed
1 tablespoon Fish Sauce
1 tablespoon coconut milk, optional
1 package bamboo skewer, optionalSoak the bamboo skewer in water at least 1/2 hour, while you marinate the pork, to prevent them from burning while on the grill.
Slice the pork into thin long strips, 1/4-inch thick. If you are planning on using the skewer, 1-inch wide strips are better. But if you are grilling the pork directly on the grill, a bigger piece might help it from falling into the coals.
Press or mince the garlic. Mix all ingredients together and marinate for 1/2 hour or even overnight.
If you are using the skewers, thread a skewer through the pork. Grill the pork until it is well done.
Makes 2 to 3 servings
