INGREDIENTS 1 teaspoon cumin seeds
1 teaspoon coriander seeds
6 fresh green chilies, chopped
1 tablespoon lemongrass, chopped
1 teaspoon coriander root, chopped
1 tablespoon shallots, chopped
1 tablespoon garlic, chopped
1 teaspoon Galangal, chopped
7 whole peppercorns
1 teaspoon salt
1 teaspoon Shrimp PasteThis is easy to make. Make extra and freeze it for future use. If you do not like using a mortar and pestle, you can use a food processor. Just be careful not to over process.
Place the cumin and coriander seeds in a pan, without adding oil. Dry-fry them, stirring, for 1 to 2 minutes, until they are aromatic and slightly browned. Pound them, or put in a food processor, with the remaining ingredients to produce a fine paste.
