Cowboy's Chili

INGREDIENTS 3 pounds coarsely ground chili beef
1 chopped bell pepper
3 small chopped onions
1-½ teaspoons garlic powder
3 teaspoons ground cumin
1 tablespoon (or less) chili powder (Ancho if you can find it)
½ teaspoon ground cayenne
1/2 teaspoon ground Cajun seasoning
1 package Chili Seasoning Mix
2 cans dark beer
1 (16-ounce) can crushed tomatoes
1 large can tomato sauce
½ small can tomato paste
1 can beef broth
1 can Rotel (diced tomtoes and chilies)
1 small can diced green chilies
1 tablespoon Worcestershire sauce
1 tablespoon liquid smoke
Tabasco, to tasteBrown meat, drain, and rinse in colander under warm water.
Add everything else except 1 can of beer and simmer for 2 hours.
Add second can of beer when needed during simmering.
*NOTE - If needed when simmering, dissolve 2 tablespoons cornmeal in 1 tablespoon ice water and add for thickening.
