Compota de Peras (Pear Compote)

INGREDIENTS 2 pounds pears
1/2 pound sugar
2 cups water
1 cinnamon stick, 3-inches long
Grated zest of 1/2 lemonPeel and core the pears. Place in pot with remaining ingredients and bring to a boil. Cook 10 to 15 minutes; until the pears are very soft but still hold their shape. Serve warm or at room temperature with some of the cooking syrup.
Makes 4 to 6 servings
