Celery and Peanut Soup

INGREDIENTS 1 tablespoon butter
1 tablespoon vegetable oil
4 large celery stalks, chopped
1 onion, chopped
3 cups Chicken stock
6 tablespoons crunchy peanut butter
Salt and freshly ground black pepper
1/4 cup light cream, to serve
Chopped celery leaves, for garnishMelt the butter and oil in a saucepan, add the celery and onion and sauté gently for about 5 minutes.
Add the stock and bring to a boil. Lower the heat, cover and simmer gently for about 30 minutes until the celery is tender.
Cool the mixture a little, then work to a pureé in a blender.
Return to the rinsed-out pan, place over low heat, then beat in the peanut butter. Heat through until just boiling. Taste and then season with salt and freshly ground black pepper.
Divide the soup among 4 warmed individual bowls. Swirl cream on the surface of each, garnish with chopped celery leaves and serve at once.
