INGREDIENTS

1 (10-1/2 ounce) can condensed beef broth, chilled
1 (8 to 8-1/2 ounce) can julienne or diced beets, chilled (1 cup)
2 tablespoons lemon juice
Dairy sour cream
Snipped chives

Combined chilled beef broth, canned beets (with liquid), and lemon juice.

Serve in chilled bowls. Top each serving with a large dollop of sour cream and a sprinkling of snipped chives.
