Black Cherry Soup

INGREDIENTS 2 pounds fresh Bing cherries
7 ounces sugar
Pinch of ground cinnamon
1 cup water
1-1/2 teaspoons potato flourPit the cherries and put them in a large saucepan with the sugar, cinnamon and 7/8 cup water. Cook the cherries over love heat until they are soft.
Mix the potato flour with the remaining water and add it to the cherries. Continue cooking the soup gently until it thickens a little, then remove it from the heat.
Cool the soup to room temperature and serve, or chill it in the refrigerator before serving.
Serves 4 to 6
