Beef Soup with Meatballs

This blend of herbs and spices, coupled with the rich beef stock and the little meatballs, offers a very unusual full-meal soup.

INGREDIENTS

3 small hot green peppers, fresh
1/2 pound ground beef
1/2 pound lean ground pork
2 cloves garlic, crushed
1 teaspoon salt
1/4 cup tomato sauce
1 teaspoon chili powder
1 teaspoon ground cumin
1 tablespoon parsley, chopped
1/2 cup bread crumbs
2 eggs, beaten
3 tablespoons butter for browning
6 cups Beef Soup Stock
1/2 cup dry red wine

Remove the seeds and chop the peppers. Mix all ingredients except the butter, soup stock, and the wine. Blend well. Form the meat mixture into 48 meatballs and brown them in the butter. Add the meatballs to the soup stock along with the wine. Simmer 10 minutes before serving.

For a full meal serve this soup with a large hearty salad and a loaf of good, crusty bread.
