Red Beans

INGREDIENTS 1 pound red kidney beans
1 package or cube ham seasoning
1/2 pound pork neck bones
1 yellow onion, chopped
5 cloves garlic, minced
1/2 chopped green bell pepper
1 teaspoon crushed red pepper flakes, or to taste
1 teaspoon salt
2 tablespoons lard or bacon fatSoak beans in pot overnight. Drain.
Place neck bones in pot of water and allow to cook until almost tender. Remove from pot and let cool until you can handle them, and remove meat from bones. Return to pot.
Add beans and return to boil. Then add onion, garlic, bell pepper and crushed red peppers. When beans become slightly tender, add ham seasoning, and cook an additional 20 or more minutes. Add lard or bacon fat.
Cook until beans are tender, just before serving, add some fresh chopped parsley, if desired. Serve over your favorite rice or with corn bread.
