Potato Salad

INGREDIENTS

4 medium white potatoes
1 teaspoon salt
1/2 teaspoon white pepper
3 hard-boiled eggs, chopped
1 cup celery, chopped
1 tablespoon parsley, chopped
1 tablespoon dill pickles, chopped
1 tablespoon yellow mustard
1/2 cup mayonnaise
Lettuce leaf

Boil potatoes in their jackets. Drain and let the potatoes cool. Peel and cut potatoes in small pieces. Season potatoes well with salt and white pepper.

Add all other ingredients and mix well. Cover and chill for at least 1/2 hour. Serve on a lettuce leaf.

Makes 4 to 6 servings
