Pecan Muffins

INGREDIENTS

2 cups all-purpose flour, sifted
3 teaspoons baking powder
1/4 cup sugar
1/2 teaspoon salt
1 large egg, lightly beaten
1 cup milk
1/4 cup melted butter
1/2 cup chopped pecans

Preheat oven to 400 degrees.

After sifting the flour, sift it again with the baking powder, sugar, and salt twice - yes, 3 times in all. Add the lightly beaten egg, milk, and butter. Stir until just moist, remembering that your batter should not be smooth. Stir in the chopped pecans just enough to incorporate into the batter.

Spoon the batter into well-greased muffin cups, filling them two-thirds full. Bake for 20 to 25 miutes or until golden brown.

Makes about 12 muffins
