Fried Grits

Occasionally, you may have some leftover grits. When they are cold, fry them.
When there are no leftovers, cook grits according to the instructions on the box, pour into a cold rinsed mold or a square or rectangular loaf pan of some kind and allow them to cool and set.
Once cold, just slice into 1/2-inch thick strips and sauté in butter or bacon drippings until slightly crisp and brown. Serve with fried ham and red-eye gravy, hash browns and blueberry muffins.
