Fried Apples

Fried Apples are not only wonderful with breakfast, but with fried pork chops, ham or duck. If you make them for any other meal than breakfast, you can leave the skins on for color and crunch.

INGREDIENTS

4 firm tart apples
4 tablespoons butter or bacon fat
1/3 to 1/2 cup sugar, white or light brown
Dash of ground cinnamon
1 to 2 tablespoons cold water

Peel and core the apples. Slice into circles about 1/2-inch thick.

Heat the butter or bacon fat in a heavy skillet over low heat. Add the apples, placing them in the pan 1 layer at a time. Sprinkle each layer with the sugar, cinnamon and a little water and cook them over low heat until the apples become nice and syrupy, about 6 minutes. Serve warm.

NOTE - You can also cook them without the water by tightly covering the pan to allow the apples to steam through nicely. They will take on a glazed look.
