Chicken and Sausage Pilau

INGREDIENTS

1 whole chicken, cut up
1 pound smoked sausage
˝ cup diced onion
˝ cup diced celery
˝ cup diced green pepper
2 cups raw rice
1 teaspoon thyme
1 teaspoon red pepper flakes
Salt and pepper to taste

Cut up one whole chicken and parboil until the meat pulls away from the bones. Discard bones, strain broth and set aside to cool.

In a large pot, sauté the sausage, onion, celery, and green pepper in a small amount of oil. Add the rice, thyme, red pepper, salt and pepper and sauté 10 minutes or until rice is brown. Add pulled chicken meat and two cups of broth. Let simmer on low for 45 minutes.
