Chicken 'N Dumplings

INGREDIENTS 1 stewing hen, unjointed and cut in pieces
DUMPLING DOUGH
1 cup milk
1 teaspoon salt
1 whole egg and 1 egg yolk
1 tablespoon shortening
FlourPut chicken in a large pot, cover well with water. Cook slowly for about 2-1/2 hours until tender. Then add salt to suit taste, and cook about 10 minutes. Remove the meaty pieces of chicken from the liquor, leaving the bony ones.
MAKE DUMPLINGS - Combine the milk, salt, whole egg, egg yolk and add enough flour to make a stiff dough.
Use a rolling pin and roll out dough very thin and cut in strips; put a few at a time into the chicken broth, cooking each batch until done. Continue until all are in pot, then pour over the pieces of chicken which have been removed and serve. (Leaving the bony pieces in the pot keeps the dumplings from sticking to the bottom and burning).
