Cheese and Sausage Grits Casserole

This is a delicious casserole. You may add a little salt, pepper, and paprika. I have not included them in the recipe because it depends on the spiciness of the sausage and your own tastebuds.
INGREDIENTS
1 pound ready-made sausage meat
1 cup uncooked grits
4 cups lightly salted water
1 cup grated Cheddar cheese
1/2 cup butter
2 large eggs, slightly beaten
1/2 cup milk
1 small clove garlic, mincedForm the sausage into patties and fry until crisp and golden brown. Be sure to pour off all of the excess fat as you are frying. Drain the patties on paper towels, then crumble into a bowl. Preheat oven to 350 degrees.
Meanwhile, follow the directions on the grits package. When they thicken up to the consistency of porridge, remove them from the heat and stir in the grated cheese. Cover and let stand for a few minutes. Then stir in the butter, eggs, milk and garlic. Stir in the sausage meat. Taste and adjust your seasonings.
Pour into a well buttered 1-1/2 quart baking dish and bake in the oven for 1 hour or until lightly browned and bubbling.
