Butternut Squash Soufflé

INGREDIENTS

4 cups butternut squash, peeled and diced
1 cup water
1/2 teaspoon salt
1/2 stick butter, melted
1 cup brown sugar
1/2 teaspoon cinnamon
1/2 cup evaporated milk
1 cup marshmallows

Preheat oven to 350 degrees. Grease 1-1/2 quart casserole dish.

Put squash, water and salt in a saucepan. Cover; bring to a boil; boil for 15 minutes or until tender. Drain and put in a mixing bowl. Mash.

Add remaining ingredients; mix well. Turn into casserole dish. Bake in the preheated oven for about 30 minutes.
