Apple Brown Muffins

INGREDIENTS 2 cups all-purpose flour, sifted
1/3 cup light brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspooon ground allspice
1/2 teaspoon ground cinnamon
1 cup milk
1/3 cup melted butter
1 tablespoon fresh lemon juice
1 large egg, well beaten
1 cup grated or finely diced, peeled and cored sweet apple, 1 medium-size applePreheat oven to 400 degrees.
Sift all the dry ingredients together twice. Combine the milk, butter, and lemon juice with the beaten egg. Pour into the dry ingredients, stirring just enough to moisten. Do not over-beat. Fold in the grated apple.
Generously grease muffin cups and fill them two-thirds full. Bake for 20 minutes or until golden brown and delicious.
NOTE - If you want to make an extra-special treat, mix together about 1/2 cup chopped mixed nuts, 1/2 teaspoon ground cinnamon, and 1/2 cup brown sugar. Sprinkle on top of each muffin just before baking.
Makes about 12 muffins
