Tomato Pie

INGREDIENTS

1 (9-inch)pie crust, homemade or store-bought
5 medium-size ripe tomatoes, sliced
1 cup chopped green onions, some green parts included
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh basil
Salt and pepper, to taste
2 cups grated sharp Cheddar cheese
1 cup mayonnaise
1/2 cup grated Parmesan cheese, freshly grated if possible

Preheat oven to 400 degrees.

Prick pie crust with a fork, bake 10 minutes, and remove from oven. Reduce oven temperature to 325 degrees.

Pat tomatoes with a paper towel.

Cover the bottom of the pie crust with 2 layers of tomatoes. Sprinkle on 1/2 of the green onions, oregano, and basil; season with salt and pepper.

In a bowl, combine the Cheddar cheese and mayonnaise, mix until well-blended, and spread 1/2 of the mixture over the tomatoes.

Repeat layering with the remaining tomatoes, green onions, oregano, basil, salt, pepper, and mayonnaise spread. Top with Parmesan cheese and bake until golden and firm, about 45 minutes.

Let the pie cool slightly before serving.
