Baked Acorn Squash 3

INGREDIENTS

1 acorn squash, 2 to 3 pounds
1/2 cup Maple Syrup, divided
2 tablespoons butter, divided
Salt and freshly ground pepper, to taste

Cut squash in half. Remove seeds and fibers. Place several slits in the tough outer skin.

Place squash, cut side up, in a baking pan filled with 1/2-inch water. Pour 1/4 cup maple syrup and 1 tablespoon butter into each half. Lightly cover and bake for 25 minutes.

Uncover and bake about another 15 minutes, or until tender. Season to taste.

Makes 2 servings

NOTE - Baking time will vary according to the size of the squash.
