Green Onion Rice Pilaf

INGREDIENTS

2 tablespoons olive oil
1/4 cup small-diced onion
1/2 teaspoon minced garlic
1 cup long-grain white rice
2 cups chicken stock or water
1 teaspoon salt
1/2 teaspoon white pepper
1/4 cup chopped fresh green onion tops

Preheat the oven to 350 degrees.

Place a 1-quart ovenproof saucepan over medium-high heat and add the olive oil. Once the oil is hot, add the onions. Sweat the onions, stirring often, until the onions are translucent, about 4 to 5 minutes. Add the garlic to the pan and sauté for 30 seconds. Add the rice to the pan and sauté, stirring frequently, until the rice is toasted, 4 to 5 minutes. Season the rice with the salt and white pepper.

Add the chicken stock to the pan and stir occasionally until the water comes to a boil. Place a lid over the pan and place the saucepan in the oven.

Cook for 30 minutes. Remove from the oven and let stand for 5 minutes. Remove the lid, and use a fork to stir the green onions into the rice. Serve while hot.
