Steamed New Potatoes

INGREDIENTS 1 pound small new potatoes
1 teaspoon unsalted butter
1 teaspoon lemon zest, grated
1 tablespoon lemon juice
1 tablespoon chives or scallions, mincedPlace potatoes in a steamer basket over boiling water. Cover saucepan and steam 12 to 15 minutes or until potatoes are tender.
Drain and rinse under cold water to cool slightly. Peel skins with a sharp knife or fingers.
Melt butter in a heavy nonstick skillet over medium low heat. Add lemon zest, juice and chives or scallions. Add potatoes and stir until potatoes are coated with butter mixture and heated throughout. Season with salt and pepper to taste.
