Creamed Mushrooms

Cream and mushrooms complement each other - in a lucious way.

INGREDIENTS

1-1/2 pounds mushrooms
1/4 pound butter
4 tablespoons Madeira wine
3/4 cup heavy cream
Salt
Freshly ground pepper

Wipe the mushrooms clean and cut caps in half with the stems attached.

Melt the butter over medium heat until it foams, stir in the mushrooms, and turn the heat to low. Simmer for 5 minutes, then add the Madeira and cream. Continue to cook over low heat for 30 minutes, stirring occasionally. Season to taste. Serve hot.
