Chilled Mushroom Salad

A mushroom lover's perfect picnic side dish. Try using a variety of mushrooms to give a different earthy flavor.

INGREDIENTS

8-ounces fresh mushrooms, sliced

LEMON VINAIGRETTE

3 tablespoons lemon juice
2 tablespoons olive oil
1/4 teaspoon sugar
1/4 teaspoon tarragon
1/4 teaspoon salt

Parlsey, for garnish

In a small bowl, mix together the ingredients for the Lemon Vinaigrette.

In a larger bowl, toss the mushroom slices with the vinaigrette. Garnish with parsley.
