Smothered Mirliton

A female mirliton is fleshier and has smoother skin than a male, which is often covered with spines. Many fresh female fruits don't even need to be peeled because they are so tender.
INGREDIENTS
1 tablespoon olive oil
1 cup chopped onion
1/2 cup finely chopped fresh parsley
4 mirlitons, peeled, seeds removed, and cubed
1-1/2 teaspoons finely chopped garlic
Salt, to taste
Hot sauce, to taste
1/2 cup dry white wineHeat the oil in a large saucepan over medium heat, then sauté the onions and parsley until the onions are clear.
Stir in the mirliton, garlic, salt, hot sauce and wine, and continue cooking until it comes to a boil. Reduce the heat to low, cover, and simmer until the mirliton is tender, stirring occasionally.
Makes 4 to 6 servings
