Seafood Dressing

This can be used as a stuffing or as a side dish.
INGREDIENTS
1/4 cup olive oil
1 cup chopped onion
1 cup chopped green onions
1/2 cup chopped bell pepper
1 cup chopped fresh parsley
1 tablespoon chopped garlic
3 cups crumbled cornbread
1 cup cubed fish
1 cup peeled, deveined, and cubed shrimp
1 cup crabmeat, picked over for shells
3 cups Fish Stock
1 tablespoon Worcestershire sauce
1 teaspoon crushed dried mint
Salt, to taste
Cayenne pepper, to tastePreheat the oven to 325 degrees.
Using a large skillet over medium-high heat, heat the olive oil and sauté the onions, green onions, bell pepper, and parsley until the onions are clear. Add the garlic and cook another 5 minutes.
In a large mixing bowl, combine the cornbread, seafood and sautéed vegetables. Mix the stock and Worcestershire together, then pour into the cornbread mixture and mix well. Stir in the mint, salt and pepper.
Turn into a large greased casserole dish and bake for 1 hour or use as a stuffing and bake until done.
Makes about 8 cups or 6 servings
