Crumb and Cheese Dressing

This can be used to stuff artichokes, eggplant, shrimp, and other seafood.

INGREDIENTS

1 cup grated mozzarella cheese
1 cup grated Parmesan cheese
3 cups bread crumbs
1/2 cup olive oil
2 tablespoons fresh lemon juice
Mashed anchovies or anchovy paste, to taste, optional
1 teaspoon dried basil
1 teaspoon garlic powder
1 tablespoon dried parsley
Salt, to taste
Cayenne pepper, to taste

In a medium-sized mixing bowl, combine all the ingredients and mix well. Use to stuff seafood or vegetables when they are baked or fried.

Makes about 5 cups
