Fried Onion Rings

INGREDIENTS 1 egg, beaten
1-2/3 cups milk
1 cup flour
3/4 teaspoon baking powder
1/2 teaspoon salt
Cayenne pepper, to taste
2 large onions, sliced in 1/4-inch-thick slices and separated into rings
Oil, for fryingCombine egg, 2/3 cup milk, flour, baking powder, salt, and cayenne pepper and mix well; refrigerate 30 minutes.
Soak onion rings in 1 cup milk for 30 minutes; drain.
Dip onion rings into batter and fry at 375 degrees until golden brown; drain on paper towels.
