Cheezy Grits

Grits are eaten for breakfast, lunch and dinner.

INGREDIENTS

5 cups water
1 cup uncooked grits
1 cup grated Cheddar cheese
2 tablespoons olive oil
Salt, to taste
Hot sauce or cayenne pepper, to taste

Place water in the bottom part of a double boiler, turn the heat to medium-high, and let it come to a boil.

Meanwhile, in the top part of the boiler, combine the 5 cups of water, the grits, cheese, olive oil, salt and hot sauce, and bring to a boil directly over medium-high heat, stirring constantly.

Turn the heat to low and continue cooking until the grits begin to thicken, about 20 minutes, stirring occasionally.

Then put the pot of grits on top of the boiling water, reduce its heat to low, and simmer for 30 minutes. Serve hot.

Makes 4 to 6 servings
