Spinach Puff

INGREDIENTS 2 (10-ounce) packages frozen chopped spinach, thawed
8 eggs
1/2 cup dairy sour cream
1-1/2 teaspoons salt
1 teaspoon grated lemon peel
1/2 teaspoon garlic salt
1/2 cup grated Parmesan cheeseHeat oven to 350 degrees. Drain spinach completely.
Beat eggs, sour cream, salt, lemon peel and garlic salt until well blended.
Stir in spinach; pour into ungreased square 8 x 8 x 2-inch baking dish. Sprinkle with cheese. Bake until knife inserted in center comes out clean, 35 to 40 minutes.
Makes 8 or 9 servings
