String Beans with Scallions

INGREDIENTS

1/2 teaspoon salt
1 pound string beans, trimmed
1 tablespoon olive oil
1 tablespoon butter
2 tablespoons chopped scallions
2 tablespoons chopped fresh tarragon
Freshly ground pepper to taste

Bring 2 cups water to a boil in a saucepan. Add the salt and string beans. Bring the water back to a boil. Simmer for 8 to 10 minutes. The beans should be tender-crisp. Drain.

Add the oil and butter to the saucepan. Over the heat add the scallions. Cook briefly. Add the tarragon and pepper and toss to blend. Serve hot.
