Steamed Green Beans

Steaming is a perfectly acceptable alternative to cooking beans in lots of boiling water, although the color will not be as valid. The method of cooking is less important than the timing: be sure that the beans are crunchy and not overcooked.

INGREDIENTS

1 pound green beans
Butter
Salt
Freshly ground black pepper

Wash the beans and remove the ends and strings, if there are any. Leave them whole or cut them in diagonal strips.

Steam them, covered, in a steamer basket over an inch or so of rapidly boiling water until just tender, but still crunchy, about 10 to 15 minutes. Drain, toss with butter, season to taste, and serve.
