Creole Corn

INGREDIENTS 4 strips bacon or ham slices
2 tablespoons oil or reserved bacon drippings
1/4 cup chopped onion
1/4 cup chopped bell pepper
2 medium-sized fresh tomatoes, peeled, seeded and chopped or 1 (8-ounce) can tomatoes
and their juice, chopped
2 cups fresh or drained canned corn
Salt, to taste
Hot Sauce or cayenne pepper, to tasteIn a large heavy saucepan, fry the bacon until crisp, then remove from the pan. In the bacon drippings, sauté the onions and bell peppers over medium-high heat until the onions are clear.
Add the tomatoes and stir, then cover and simmer for 15 minutes. Add the corn, salt and hot sauce. Crumble the bacon, add to the mixture, mix well, and heat thoroughly. Serve as a side dish.
