Corn Pudding

A simple side vegetable dish. Serve with Pork-Stuffed Peppers or Stuffed Pork Chops.

INGREDIENTS

2 (16-ounce) cans corn kernels, drained
6 eggs
1 small yellow onion, chopped
1 small bunch parsley, minced
1 cup milk
1/2 pound Swiss cheese, grated
1 medium sweet red pepper, diced
1 medium green bell pepper, diced
Salt and pepper, to taste

Combine all ingredients; pour into a greased 2-1/2-quart casserole and bake in a 350 degree oven for 1-1/2 hours, or until knife inserted in center comes out clean.

Makes 8 servings
