Corn "Oysters"

Lightly browned, with a chewy texture, simple flavor, and fresh corn taste. Serve these with ham, perhaps a few drops of maple syrup over them.

INGREDIENTS

1 cup grated or chopped fresh corn kernels
1 egg, well beaten
1/4 cup flour
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
4 tablespoons butter

Combine the corn with the egg, flour, salt, and pepper and mix well.

Shape into patties (or "oysters") about 2-1/2 inches in diameter.

Heat the butter in a skillet until foaming, then add the corn oysters. Cook over medium heat for 3 or 4 minutes. Turn when golden brown, and brown the other side. Keep warm in a low oven until ready to serve.
