Sweet and Sour Cabbage Soup

INGREDIENTS

4 to 5 cups vegetable stock
1 small head cabbage, shredded
1 (14.5-ounce) can tomatoes, chopped and undrained
1 teaspoon brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper
Juice of 1/2 warmed lemon
1 medium onion, diced

Toss all ingredients into a pot large enough to contain them. Bring to a boil; then reduce to simmer and cook for 1-1/2 hours. Taste after about 1 hour to see if you might want more brown sugar.
