Sweet-Sour Red Cabbage

INGREDIENTS

2 tablespoons vinegar or lemon juice
1 medium head red cabbage, shredded, about 5 cups
4 slices bacon, diced
1/4 cup packed brown sugar
2 tablespoons flour
1/2 cup water
1/4 cup vinegar
1 teaspoon salt
1/8 teaspoon pepper
1 small onion, sliced

Heat 1/2-inch salted water (1/2 teaspoon salt to 1 cup water) and 2 tablespoons vinegar to boiling. Add cabbage. Cover and heat t boiling. Cook until crisp-tender, about 10 minutes; drain.

Fry bacon until crisp; drain. Drain fat from skillet, reserving 1 tablespoon. Stir brown sugar and flour into fat in skillet. Add water, 1/4 cup vinegar, the salt, pepper and onion. Cook, stirring frequently, until mixture thickens, about 5 minutes.

Stir bacon and sauce mixture into hot cabbage in saucepan; heat through. Garnish with additinal crisply fried diced bacon, if desired.
