Scandinavian Traditional Red Cabbage

INGREDIENTS

1 red cabbage, cored
1 yellow or red onion
2 to 4 sour apples
2 tablespoons butter, margarine, or vegetable oil
8 cloves
1 to 2 tablespoons sugar
3 tablespoons red wine vinegar and/or lemon juice
Salt, to taste

Cut the red cabbage into thin slices, then strips. Peel, core and slice the apples into pieces. Slice the onion.

Melt the butter in a large pot over medium heat. Add the cabbage, onion, apples, vinegar, spices, and salt. Cook, covered, over low heat for 1 hour, stirring occasionally. Add more vinegar or lemon juice according to taste. Serve hot with your meal or cold on pork sandwiches the next day. Can be frozen.
