Hot Slaw

A tart, vinegary dressing that is a good foil for shredded cabbage. This would be nice with pork or ham.

INGREDIENTS

1 pound cabbage
2 egg yolks
1 tablespoon butter
1/4 cup cold water
1/4 cup cider vinegar
Salt

Shred the cabbage and have it ready in a bowl.

Mix the egg yolks, 1/4 cup of cold water, butter, and vinegar in a heavy-bottomed pan. Cook, stirring constantly, over low heat until thickened.

Add the cabbage and stir briskly to coat. Add salt to taste. Heat through and serve.
