This basic coleslaw recipe lends itself to many variations, including the ones listed here. You can also easily reduce the amounts of ingredients to serve 1 or 2. Making this coleslaw with plain yogurt instead of sour cream reduces the calories per serving to 110.

You can add any of the following ingredients or combinations of ingredients to vary the slaw:

1 tablespoon prepared horseradish - 1/2 sweet red or green pepper - 2 tablespoons snipped fresh dill or 1 teaspoon dillweed - 1 teaspoon caraway or celery seeds - 1 or 2 grated carrots - 1 cup leftover vegetables, diced - 1 or 2 chopped pimientos - 1 apple, cored and chopped, but not peeled, with 1/2 cup chopped nuts, 1/2 cup raisins or seedless grapes - or 1/2 cup diced peaches, pears, pineapple or orange.

INGREDIENTS

1 small firm head cabbage (about 1-1/4 pounds)
1/2 cup mayonnaise
1/2 cup sour cream or plain yogurt
1/2 teaspoon salt
1/8 teaspoon black pepper

Cut the stalk end from the cabbage, and remove any discolored or limp outer leaves. Quarter the cabbage lengthwise, and trim off and discard the core at the point of each quarter.

Cut the sections of cabbage into very thin slices. Place the slices in a bowl and toss with the mayonnaise, sour cream, salt and pepper.
