INGREDIENTS

1 large head red cabbage, shredded
1/2 cup bacon drippings
1 large onion, chopped
1 cup dry white wine
1/4 cup sugar
1/4 cup cider vinegar
1 teaspoon minced garlic
1 apple, peeled, cored and shredded
Salt, to taste
Hot Sauce or cayenne pepper, to taste

Over medium heat in a large, heavy saucepan, sauté the onions in the bacon drippings until clear. Add the wine, sugar, vinegar, and garlic, stir; and let simmer 5 minutes.

Add the shredded cabbage, cover, and simmer another 20 minutes. Add the shredded apple and simmer, uncovered, stirring often until the cabbage and apple are tender. Season to taste with salt and hot sauce.
