Cabbage Cooked In Stock

INGREDIENTS 8 to 10 cups Meat or Ham Stock
1 large head cabbage, rinsed and quartered
8 to 10 small new potatoes, in skins
4 small whole onions
Salt, to taste
Hot Sauce or cayenne pepper, to tastePour the stock into an 8-quart pot and bring to a boil. Add the cabbage, potatoes and onions; cover, reduce the heat to low, and simmer until the cabbage and potatoes are tender. (When they can easily be pierced with a fork, at least 1 hour.)
Remember, the stock is already seasoned, so taste before adding any more seasonings.
Makes 8 to 10 servings
