Braised Red Cabbage and Apples

This is exceptionally good; moist, spicy, and faintly sweet. A roasted loin of pork would be a splendid companion.

INGREDIENTS

4 tablespoons bacon fat
2 tablespoons sugar
1 onion, chopped
2 pounds red cabbage, shredded
2 tart apples, peeled, cored, and sliced thin
2 tablespoons cider vinegar
1/2 teaspoon caraway seeds
1/4 teaspoon nutmeg
1/8 teaspoon cayenne pepper
1/2 cup dry red wine
Salt

Melt the bacon fat in a skillet, add the sugar and cook, stirring, for 2 minutes. Add the onion and cook slowly until lightly colored.

Stir in the cabbage, apples, vinegar, caraway seeds, nutmeg, cayenne, and red wine. Cook over low heat, covered, for 10 minutes, then add 1/2 cup water and cook, with cover askew, stirring occasionally, for 30 to 40 minutes more. Add salt to taste. Serve hot or cold.
