Braised Chinese Cabbage

INGREDIENTS

8 strips bacon
1 head Chinese cabbage, shredded
Salt
Freshly ground pepper
Soy sauce

Cook the bacon in a skillet until crisp; remove and drain. Pour off all but 2 tablespoons of bacon fat.

Heat the remaining fat, then add the cabbage. Cover and cook slowly, stirring occasionally, until just tender, about 3 minutes. Crumble the bacon and stir it into the cabbage. Season to taste with salt and pepper and serve with soy sauce.
